Mini Chocolate Cake

Ingredients
- .25 cup all purpose flour
- .25 cup sugar
- 7 tsp cocoa powder
- .25 tsp baking powder
- .125 tsp baking soda
- Small pinch of salt
- .5 large egg, room temperature
- 2 Tbsp milk
- 2 Tbsp oil
- .25 tsp vanilla extract
- .5 Tbsp coffee
Instructions
- Preheat oven to 350 F.
- Line cake tin with parchment paper and spray with non-stick cooking spray.
- Sift and whisk together dry ingredients.
- Sift and whisk together wet ingredients.
- Combine wet into dry and mix well.
- Bake for approximately 20 minutes or until a toothpick in the center comes out clean.
- Allow the cake to cool completely before removing from pan.
- Use ring mold to cut out mini cakes.
- Brush coffee over the tops of each cake.
