Spinach and Mushroom Ravioli
Ingredients
- Fresh pasta
- 1 Tbsp olive oil
- 1.5 cups mushrooms, chopped
- 1 pack (10 oz) frozen chopped spinach, thawed and squeezed dry
- .5 cup mozzarella, shredded
- .5 cup parmesan, shredded
- 1 clove garlic, minced
- .25 cup onion, minced
- Salt and pepper, to taste
- Parmesan, grated
Instructions
- Make pasta dough. Let rest for 15 minutes.
- Heat oil in a pan.
- Saute mushrooms, garlic, and onions until most moisture has evaporated. Let cool.
- Combine cheese, spinach, salt, and pepper in a bowl. Add mushroom mixture.
- Split dough into two and roll until smallest setting.
- Allow pasta to dry for 20 minutes, flipping every 5 minutes.
