Chocolate Espresso Lava Cake

Ingredients

  • .5 cup all purpose flour
  • 6 oz bittersweet chocolate
  • 1 stick butter, unsalted
  • 3 eggs
  • 3 egg yolks
  • 1 cup powdered sugar
  • 6 tsp espresso powder
  • Cocoa powder

Instructions

  1. Preheat oven to 425 F.
  2. Grease ramekins well and dust with cocoa powder.
  3. Melt butter and chocolate together over water bath.
  4. Sift flour, powdered sugar, and espresso powder.
  5. Beat eggs and add in chocolate mixture.
  6. Add in flour mixture.
  7. Pour into ramekins and bake for 12 minutes.
  8. Let cool.
  9. Top with coffee ice cream, raspberry, or mint.
