Corn and Arugula Salad
Ingredients
- Arugula
- 2 to 3 ears of corn
- .5 red onion, finely chopped
- .25 cup olive oil
- .5 lemon, juiced
- 1 tsp salt
- .5 tsp pepper
Instructions
- Cook corn in microwave for 5 minutes.
- Cool and husk.
- Slice corn kernels off husk.
- Mix all ingredients together.
Notes
Optional: add edamame or grape tomatoes.
