Chocolate Espresso Lava Cake

Ingredients
- .5 cup all purpose flour
- 6 oz bittersweet chocolate
- 1 stick butter, unsalted
- 3 eggs
- 3 egg yolks
- 1 cup powdered sugar
- 6 tsp espresso powder
- Cocoa powder
Instructions
- Preheat oven to 425 F.
- Grease ramekins well and dust with cocoa powder.
- Melt butter and chocolate together over water bath.
- Sift flour, powdered sugar, and espresso powder.
- Beat eggs and add in chocolate mixture.
- Add in flour mixture.
- Pour into ramekins and bake for 12 minutes.
- Let cool.
- Top with coffee ice cream, raspberry, or mint.
