Corn and Arugula Salad


Ingredients

  • Arugula
  • 2 to 3 ears of corn
  • .5 red onion, finely chopped
  • .25 cup olive oil
  • .5 lemon, juiced
  • 1 tsp salt
  • .5 tsp pepper

Instructions

  1. Cook corn in microwave for 5 minutes.
  2. Cool and husk.
  3. Slice corn kernels off husk.
  4. Mix all ingredients together.

Notes

Optional: add edamame or grape tomatoes.
