- pasta machine
Ingredients
- 1 part flour to 1 part egg yolk
- 1 Tbsp olive oil
- Salt
Instructions
- Form a well in the middle of the flour.
- Add the egg and egg yolks into the well.
- Mix with a fork.
- Knead until well incorporated.
- Let dough rest for 10-15 minutes.
- Roll the dough out and laminate before inserting into pasta machine.
- Cut and flour pasta.
- Cook for 60 sec in salted boiling water.
- Drain and rinse in cold water or add butter/olive oil to prevent sticking.
Notes
Roll dough out thoroughly and slowly to prevent cracking.
