Fresh Pasta


Equipment

  • pasta machine

Ingredients

  • 1 part flour to 1 part egg yolk
  • 1 Tbsp olive oil
  • Salt

Instructions

  1. Form a well in the middle of the flour.
  2. Add the egg and egg yolks into the well.
  3. Mix with a fork.
  4. Knead until well incorporated.
  5. Let dough rest for 10-15 minutes.
  6. Roll the dough out and laminate before inserting into pasta machine.
  7. Cut and flour pasta.
  8. Cook for 60 sec in salted boiling water.
  9. Drain and rinse in cold water or add butter/olive oil to prevent sticking.

Notes

Roll dough out thoroughly and slowly to prevent cracking.
