Rack of Lamb (Sous Vide)

- sous vide cooker
Ingredients
- 1 rack of lamb
- Salt and pepper
- 3 cloves garlic
- Shallots
- Thyme
- Butter
Instructions
- Trim rack of lamb and pat dry.
- Season heavily with salt and pepper.
- Crush garlic and cut shallots.
- Place lamb, garlic, shallots, and thyme in a bag.
- Sous vide for 2-4 hours at 63 C.
- Place butter in a hot pan.
- Sear for 30 seconds on all sides.
- Rest for 15 minutes. Serve.
