Add cream of tartar, granulated sugar, and salt and beat until shiny peaks form.<\/li><li>Fold in extracts, purees, or food colorings.<\/li><li>Fold in flour and sugar mix.<\/li><li>Transfer batter to pastry bag with 1\/4 inch tip. Pipe 3\/4 inch rounds onto a nonstick baking surface (preferably silpat).<\/li><li>Firmly tap baking tray against hard surface twice to loosen air bubbles.<\/li><li>Let cookies sit until firm to the touch (15 minutes).<\/li><li>Bake for 10 minutes.
